I love meatloaf! Let me rephrase that – I love my mom’s meatloaf. It is my comfort food, and she makes it for me every time I am home. This is her recipe but no matter how hard I try it never tastes as good as it does when she makes it. These Mini Meat Loaves are great if you are cooking for a family and they cook quickly. These work for both Phase 3 and 4.
For Phase 3, make sure you break up the meatloaf and add a little no sugar added ketchup. Here is the link to make your own No Sugar Added Ketchup.
Mini Meat Loaf
Ingredients
- 2 1/2 lbs Lean Ground Beef
- 1 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic salt
- 1 cup bread crumbs
- 1 cup milk
- 1/3 cup onion, finely chopped
- 1 tbsp Worchester Sauce
- 2 tbsp ketchup, low-sugar
Instructions
- Preheat oven to 350 degrees.
- Lightly spray muffin tins with cooking spray.
- Add everything to a bowl.
- Using clean hands mix ingredients together.
- Divide mixture into muffin pans and top with extra ketchup.
- Bake for 30-35 minutes.
- Drain after 15 minutes.
- Drain again when cooking time is up. Let cool before serving.
